Revisited @belonhk for @chezcalvert popular weekend lunch and we were introduced to the White Asparagus Soup with Shiro Ebi – a seasonal dish from the ala carte menu.
White Asparagus is a highly prized late spring to early summer ingredient while Shiro Ebi (white shrimp) is one of the most sought after prawns from Toyama Bay, Japan.
The white asparagus soup is subtly sweet, creamy, with a very slight hint of bitter note and it balances very well with the refined sweetness and texture of the Shiro Ebi.
Together, it is an epitome of elegance in taste and appearance.
