New Restaurant: Have you tried Testina, the latest Italian restaurant in Central, Hong Kong yet?


HONG KONG – ZS Hospitality Group, the company behind the two-Michelin-starred Ying Jee Club, one-Michelin-starred Whey, one-Michelin-starred Hansik Goo, and other popular restaurants, opens Testina, a new modern trattoria concept created in collaboration with Trippa Milano, one of Italy’s most acclaimed and beloved restaurants.

Co-founded by head chef Diego Rossi and partner Pietro Caroli, Trippa opened its doors in Milan in June 2015.

Since then, it has now become one of the most coveted seats in Milan.

Chef Diego, who has a MICHELIN-starred culinary background, reconnects with the traditions of Italian cuisine in Trippa to create fresh and comforting dishes.

The MICHELIN Guide Italia has recognized it, and the Guida Ristornati de L’Espresso has awarded it the Best Trattoria in Italy.


Diego was also named Best Chef of the Year by the Identità Golose Guide in 2019.

This collaboration at Testina is set to bring excitement to Italian food lovers in Hong Kong and international guests.

So… tell me about more about Testina!

The name Testina, which means “head” in Italian.

It reflects Trippa’s cooking philosophy that every part of the animal, including offals and rare pieces of meat, is used, transforming ignored or lesser-known items into gourmet pleasures.

While Testina’s menu is small and not extensive, it is built on classic recipes passed down from generation to generation, refreshed and polished with personal style and a nose-to-tail approach.


Testina is soft-opened on February 9th. This is the first of three new ZS Hospitality Group openings in the newly restored 8 Lyndhurst Terrace in 2022.

“With Testina, we want to continue our main mission of bringing unique and distinctive concepts to Hong Kong’s ever-growing dining scene with a fresh twist on Italian cuisine,” says Elizabeth Chu, Chairlady of ZS Hospitality Group.

Located on the third floor of 8 Lyndhurst Terrace, serves genuine yet modern Italian meals that take customers to the family dining table in Italy while providing an upgraded experience.

Who is the Head Chef of Testina?


Head chef Marco Xodo is formerly of the two-Michelin-starred 812 Otto e Mezzo BOMBANA Shanghai with nearly two decades of experience working at some of the most prestigious Italian kitchens in Europe, the Middle East, and Asia.

Chef Marco combines his craftsmanship and creativity to deliver honest Italian food with deep passion at Testina that utilizes fresh and quality produce from both Hong Kong and Italy to bring Testina’s culinary vision to reality.

What are the signature dishes at Testina?


The “Testina” Pig Head (HK$258), a signature dish named after the restaurant, has a rich and soft pan-seared pig head topped with salsa verde and horseradish shavings, which provide a bright and punchy flavor to the dish.


The aromatic and delectable Homemade Tagliatelle with Duck Ragù (HK$228+) is made with shredded duck cooked slowly in a tomato sauce and roasted cherry tomato sauce, combined with freshly produced tagliatelle and finished with a generous dusting of aged parmesan cheese.


The rich in flavours Charcoal Grilled Bone Marrow (HK$188+/pc) seasoned with salt, black pepper, and rosemary is a visual and culinary delight at Testina.


To cleanse the palette, it is served with toasted garlic bread and a mixed herb salad on the side.

Testina offers authentic yet modern Italian meals that seek to provide Hong Kong and global customers with a new viewpoint on Italian cuisine, with trattoria reinvented.

The menu is built on classic recipes passed down from generation to generation, refreshed and polished with a distinct flair and a nose-to-tail approach.

Its nostaglic décor pays homage to Milanese trattorias from the 1970s with vivid mustard-yellow walls, olive green furnishings, and Palladiana flooring.

Reservations are now accepted two months in advance and Testina releases a new day for booking every morning at 10am.

Who is Chef Alex Dilling?👇🏼
Alex Dilling @adills1 was previously the Executive Chef of two stars Michelin, The Greenhouse, in London.
He honed his culinary skills under masters of French gastronomy and icons, @alainducasse and @helenedarroze while being mentored and guided by the esteemed Didier Elena and @cheftonyesnault.
With his constant achievements of creating and maintaining Michelin stars throughout his culinary journey - from Adour and @caviarrusse in New York to @helenedarrozeconnaught and @thegreenhouselondon - Chef Alex Dilling opened his very first standalone @alexdillingcaferoyal in Sep 2022.
His latest restaurant overlooks Regent Street in the heart of London.
Since its launch, @alexdillingcaferoyal has been highly sought-after by local and international food connoisseurs for his luxurious and bold interpretation of French classics.
Thanks to the 2-day collaboration with @chefkirk_w at @jaanbykirk, fine dining lovers in Singapore got to try some of his dishes without having to travel to London.
It was also my first time trying Guest Chef Alex Dilling’s dishes.
😌 I love how the menu is built up with @chefkirk_w’s light and ethereal flavours and @adills1’s bold yet sophisticated style coming together harmoniously through each alternating course.
It was a gastronomic treat for my palate & senses.
🤩 My most unforgettable dish of this lunch experience was undoubtedly the main course, Hunter’s Chicken, by @adills1 
Bold, distinct and refined, it was Chef Alex Dilling’s modern interpretation of the classic Hunter’s Chicken.
😯 And just when I thought the experience peaked at the main course, Chef Kirk Westaway’s Pear dessert ended my lunch on a high.
Thank you @chefkirk_w @adills1 and your stellar team for this amazing lunch collab experience.
Definitely adding @alexdillingcaferoyal to my must-visit restaurant list in London.

More than that, this Tuna Crudo course by 🌟🌟🌟 @odetterestaurant is layered with tomato jelly made with tomato consommé, basil, tarragon, chervil and a touch of parsley - This combo makes me 😍
Together with the toppings of Kristal caviar that is less briny and more nutty, gold flakes and fried Japanese buckwheat gives this dish an extra edge with texture and taste.
Within these flavours, there is a hint of refreshing yuzu and green pepper that comes after.
Completed with a shot of tomato consommé with extra virgin olive oil (not in video) that is 😌 MmMm.

The first course of this collaborative dinner was with these gently poached local 🦪 oysters from Java, Indonesia by @aperitifbali.
Topped with apple granita, dill emulation, ginger and drizzled with daishi vinaigrette, it has this 😃 bright and 😍 invigorating taste that makes me happy.
