Castellana by local Italian native Chef Fabiano Palombini debuts a new 4-Course White Truffle Degustation Menu highlighting prized “white diamonds” from the world’s white truffle capital, Alba, in collaboration with Chef Marco Sacco, who holds a total of 3 Michelin Stars in Italy.
White truffles, unlike black truffles, must be foraged in the wild with the help of a truffle hunter (trifulau) and their trained sniffer dog. The highly sought-after white truffle will appear in every dish of the new 4-course autumn menu, which will be accompanied by an exceptional selection of Piedmont wine pairings.
New 4-Course Alba White Truffle Menu
Starting with a whipped creamy Mountain Egg topped with crisp and savory braised leeks, black pepper, and Alba white truffle, the creaminess of the egg pairs perfectly with a glass of Laherte Freres, Ultradition Champagne NV.
To replace Castellana’s original serving of Vigezzo ham, a classic Piedmont-style homemade Tajarin (tagliolini) is served with signature “Au Koque” sauce and white truffles. Matteo Correggia, Roero 2018, is paired with the rich, egg-laden pasta dish.
The following course is either Brittany Blue Lobster with potato foam and white truffles or Racan Pigeon with white truffles.
Slow cooked at 70 degrees to achieve a melting bite, the juicy and crispy lobster tail is served with creamy mascarpone cheese and potato foam. Damilano Chardonnay 2017 is paired with the lingering sweetness of lobster.
The aged Racan pigeon, alternatively, is served with a braised and pan-seared leg braised with butter, rosemary, thyme, juniper berries, and garlic.
This dish is finished with Perigord sauce and fresh Alba white truffles from the region of Perigord. Pellissero, Barbaresco Nubiola 2016, best known for its pairing with feathered game, is the wine chosen for this dish.
The menu concludes with a White Truffle Tart, which consists of a short-crust tart filled with a Piedmont hazelnut cream ganache and topped with golden leaves and fresh white truffles. Enjoy with a glass of Ca’ Rugate, Recioto di Soave La Perlara 2015.

The new Alba White Truffle Menu (market price + HK$780 for wine pairing) at Castellana includes 5 grams of only the finest, hand-picked truffles from Alba, a town tucked within the hills Langhe region of Piedmont, northern Italy.
The limited-time menu is only available at Castellana for dine-in lunch and dinner from Monday to Saturday.
