Singapore National Week at Mrs. Pound in Hong Kong

Ah Singapore…otherwise known as The Lion City, Singapore will forever have a special place in my heart.
In honour of Singapore National Day on 9 August, I have decided to share my love for the city and host a Singapore National Week! I have created 2 Singaporean inspired dishes and cocktails that will be available at mine ALL DAY FROM 9 – 16 August:
1) Deep Fried Soft Shell Crab with Black Pepper Sauce HK$98
*Crab is one of Singapore’s national dishes, and my favourite way to eat it is soft shell crab! My version is extra crispy, extra tender, and is cooked with a black pepper sauce.*
2) Tofu Fa (tofu pudding) with Pandan Syrup and Caramel Yuba HK$60
*Tofu Fa is a popular dessert made from soybeans. I encountered plenty of stalls during my trips to Singapore selling fresh tofu fa, it quickly became my late-night go to! My version is infused with pandan syrup and topped with a caramel yuba (dried beancurd).*
1) Singapore Sling HK$140
*While the original recipe for this classic gin based cocktail remains a secret, this is my bar manager Austen Philip Lendrum‘s take on the drink.*
2) Marina Bay Parade HK$130
*A sip of Marina Bay Parade and I am brought back to those warm summer evenings spent wandering along the promenade, taking in the lights and sights of the city.*
